7 Days to Die has a ton of customizable settings you can play around with when you create your server. Of these choices, you have six different difficulties that will change how challenging the server is to play on. Especially if it's your first time setting up a server, it can be a bit overwhelming to figure out which one is the best to choose, since each difficulty setting will dramatically change how you approach zombies and your survival tactics.
While each person will want a different experience when playing 7 Days to Die, it's important to consider what you want to focus on while playing. If your main concern is how difficult enemies will be, then it's essential to play around with the difficulty settings to see what will suit you best. Remember that you can also change the settings after you've set up a server, so it's good to try out different levels and see how you deal with each of them.

Everything else in the game world, including how many resources and loot you can find, remains the same no matter what difficulty you choose to play on. Additionally, difficulty settings don't affect the game stage, which is how much the innate difficulty of the game increases depending on your level and survival skills.
How to Change Difficulty Settings in 7 Days to Die
To change your difficulty settings in 7 Days to Die, you need to find the difficulty tab under "General" when you first set up your server. You can scroll through the six difficulties mentioned above to choose which one you want to try out and leave it on that difficulty. When you start your server, you'll load into the game with that difficulty. If you find it's too easy or a bit too challenging, you can also change your difficulty setting after you've started the game.
You can do so by exiting your server and heading to the main menu. From here, click "Continue Game" and navigate to the server you want to change on the left side of the screen. Now, all you need to do is change your difficulty from the same tab as above and click "Start Game" at the bottom of the screen.
The best difficulty setting will range from player to player, so there isn't one good setting to determine here. If you're looking for a serious challenge, though, trying out Survivalist or Insane would be your first port of call. 7 Days to Die is quite a challenging game already, so if you're a newer player, it may be best to start out on Adventurer or Nomad.
