This list contains spoilers for many Dragon Ball series.
Vegeta has been able to unlock most of the transformations Goku unleashed in Dragon Ball. But for many decades, Dragon Ball fans believed that Vegeta wasn't able to transform into Super Saiyan 3. In Dragon Ball GT, for example, he transformed into Super Saiyan 4 without ever tapping into SSJ3. Later, in Dragon Ball Super, he unleashes transformations such as Super Saiyan Blue and Ultra Ego, without ever using SSJ3.
This led to many fans creating theories trying to explain how Vegeta was able to achieve more powerful forms without ever unlocking SSJ3. However, he apparently has always been able to do it. In fact, there are other forms Vegeta has used that many fans don't even know about, so let's delve into some of them.

As mentioned, fans thought for a long time that Vegeta had never unlocked Super Saiyan 3. Then Dragon Ball Daima Episode 12 proved that Vegeta indeed can transform into SSJ3, which raises many other questions. Actually, Daima wasn't the first anime in which Vegeta used this transformation; he also did it in the Dragon Ball Super Heroes promotional anime.
The thing is, for most fans, DBSH is not canon and should not be taken into account in the Dragon Ball timeline (and thus many don't even know he did it first there). Therefore, DB Daima, a series in which Akira Toriyama was heavily involved, featuring Vegeta Super Saiyan 3 (or Ultra Vegeta 1, as he calls it), was a big surprise to most fans. Of course, this promptly led to questions about Vegeta not using this form in Dragon Ball Super, and there could be many ways to explain it. SSJ3 is said to consume a lot of energy quickly, so Vegeta might not see much value in using it in battle.

Many fans forget that Vegeta transformed into the Great Ape/Oozaru in the Saiyan Saga in Dragon Ball Z, but most people know he could do it; they simply forget about it, as Vegeta never got his tail back and thus never tapped into the Great Ape again. However, the Golden Great Ape is a transformation not known by all fans, since many have skipped Dragon Ball GT for many reasons. The Golden Great Ape, also known as the Super Great Ape, could be described as the Super Saiyan version of the Great Ape. It is much stronger than the regular Great Ape form, and it was first mentioned in Dragon Ball Z, when Vegeta tells the legend of the Super Saiyan.
This concept was finally explored in Dragon Ball GT, where Vegeta was eventually able to transform into the Golden Great Ape in the Baby Saga. In fact, Vegeta didn't do it by himself (the first time). Baby tapped into this form while controlling his body. Goku did it a few episodes earlier, but none of them have ever done it once again (well, they have no tails to even try). Since Toyotaro used the Golden Great Ape in the Dragon Ball Heroes manga, there is a chance he might want to reuse it in Dragon Ball Super.

Super Vegeta is the evolution of Vegeta's Super Saiyan 1 form. During the Cell Saga, Vegeta trained with Trunks in the Hyperbolic Time Chamber in order to get stronger and defeat Cell. This was where Vegeta created Super Vegeta, because he likes to name his feats. With this power, which is like a second grade of SSJ1 (don't confuse it with SSJ2), Vegeta becomes more muscular and more powerful. Unfortunately, he hasn't used this power-up many times.

Many fans don't like Super Saiyan, either because they consider it an "ugly" transformation or because it wasn't canon until Dragon Ball Daima came out. Despite the hate, SSJ4 is actually a cool concept. It's great that there is a Saiyan transformation, with a design that takes inspiration from the fact that Saiyans have tails and transform into huge apes/monkeys.
Vegeta turned into Super Saiyan 4 in Dragon Ball GT in the Shadow Dragon Saga, in an episode titled "Super Saiyan 4 Vegeta." Dragon Ball GT makes it look like a Saiyan needs the ape form to turn into SSJ4, especially since Goku and Vegeta unleash this form after tapping into the Golden Great Ape. Dragon Ball Daima follows a different direction, but Vegeta wasn't able to unleash SSJ4 in Daima.

Dragon Ball Super: Broly |
Super Saiyan Blue is an evolved form of Super Saiyan God, but Vegeta was able to unlock Super Saiyan Blue in Dragon Ball Super without ever achieving Super Saiyan God... At least on screen. Both the manga and Dragon Ball Super: Broly make it clear that he is able to tap into this form, and additional material also revealed that he was able to do it while training with Whis for months.
Some speculate that he achieved God Ki there, but others claim nothing contradicts the fact that he performed the ritual offscreen. In any case, while it seemed that Vegeta could skip transformations by tapping into SSB without unleashing SSG or turning into SSJ4 without unlocking SSJ3, in fact he apparently doesn't have that power, even though he might have achieved SSG without the ritual.

Since Baby controlled Vegeta through Tuffleization in Dragon Ball GT, this may be the series with the biggest number of unique forms he has ever tapped into. When he was under Baby's control, his Super Saiyan form was altered. Instead of blonde hair, he had silver hair and silver eyebrows, black eyes, and his face also got a few extra lines. Similar to Majin Vegeta, it also greatly increased his powers.
Perhaps once Dragon Ball Super returns, Vegeta will unlock Ultra Instinct, as a few fans speculate he eventually will (and Goku will learn Ultra Ego). Either way, there are probably many more transformations to come in the Dragon Ball universe.
