The Tato is a common crop for the residents of Appalachia that they started planting after the Great War in Fallout 76. Its versatility and ability to grow in the Wasteland farms' radiated soil makes it extremely easy for anyone to do so.

You can eat Tatos raw to reduce your hunger or use them in various recipes. In addition, you can also turn Tato into vegetable starch, which you can then scrap for adhesive, another important crafting material. Here are all Tato locations in Fallout 76, so you have more than you'll ever need.
