Since The One Piece Remake will supposedly be starting from Romance Dawn, Haki will likely take a while to become a recognized factor in the narrative depending on the changes made. Given the Straw Hats do not learn how to use Haki or even know of its existence in the early stages of their adventure, the only possibility of seeing this will be with other characters.
If that is the case, it would be highly beneficial if the Armament, Conqueror's, and Observation Haki's sound effects were all maintained. While this definitely is not a dealbreaker, it stands as a factor in maintaining the essence of the original while adding changes to delight fans.

Mayumi Tanaka Voiced The Live Action Luffy In Japanese Dub
The one aspect that must be kept in place in WIT Studio's The One Piece Remake, is the voice actors of the Straw Hats. Mayumi Tanaka and Kazuya Nakai stand as legendary voice actors for the series, and fans recognize them as Luffy and Zoro. While circumstances such as Inaki Godoy's portrayal of Luffy in the live-action Netflix adaptation are understandable, a in this context in any One Piece animated adaptation would not make much sense.
While it may heavily depend on how long The One Piece Remake is set to run, the current Japanese voice actors of these beloved characters are essentially part of what makes them who they are in the anime of One Piece. Based on the announcement trailer for the remake, it appears as though the voice actors will be keeping their roles after hearing Mayumi Tanaka voicing a younger Luffy in the trailer. A change to voice actors for characters outside of the Straw Hats may be understandable. This is seen in examples of Whitebeard and Gol D. Roger's voice actors changing due to the unfortunate passing of Chikao Ohtsuka and Kinryu Arimoto, but in the case of current voice actors for what fans know of in the original series, it would be great to see them return here.
