The entire discussion and theory-crafting behind God Fruits began due to, arguably, the most important reveal in the entire One Piece story. What was once always believed to be a regular rubber fruit that Luffy had been using since the start eventually turned out to be the most powerful Devil Fruit in history.
The Hito Hito no Mi, Model: Nika, more commonly called the Nika Fruit, still remains draped in mystery, but what is known is that it provides the user with the ability to transform into the mythical Sun God Nika. Far before even the Void Century, there were legends of a being named Nika, who was the patron God of all the oppressed people of the world. With his laughter and liberating heartbeat, he would go around bringing freedom to the oppressed.

The truth of this remains vague, but what is known is that there was at least one person who had eaten this Devil Fruit before Luffy, and this was Joyboy. The Nika Fruit imbues the user with incredibly absurd powers, allowing them to treat their entire body like rubber. Though its time in the First World remains a mystery, it's known that Joyboy used this Devil Fruit during the Second World. Dr. Vegapunk's explanation of the nature of Devil Fruits attributes them as being the product of many people's dreams, so seeing how this Devil Fruit brings forth the powers of the Sun God, it can be implied that Nika already once existed in the world before the fact, causing people to dream about his abilities which, in turn, birthed a Devil Fruit that granted his powers.

Ever since the beginning of the long-awaited Elbaf arc, fans have been bombarded with critical pieces of new information that have changed the way they see the world of One Piece. Among these was the Giant's belief of Sun God Nika, who many on the island are convinced was actually a Destroyer God rather than the Great Liberator.
Details about this are still a bit vague, but the general consensus among fans is that there is yet another God Fruit that turns the user into 'Nika', but this one has unparalleled destructive power that may have brought change to the planet upon the closing of the First or Second World. This seems to line up with Elbaf's secret treasure, which is said to be a legendary Devil Fruit. The framing of this is quite interesting, since the Hito Hito no Mi, Model: Nika is the only other Devil Fruit to have been called legendary.
As for what this fruit looks like or how it operates, that is something fans just have to wait and see since Oda has deliberately been very quiet about it. However, it being a destructive God Fruit seems to be the overwhelming possibility regarding its true nature, since that would be perfectly in line with the Destroyer Nika Fruit.
Ever since Rocks D. Xebec was introduced in the flashback of the Elbaf arc, an entirely new possibility arose regarding this mysterious Devil Fruit. One of the biggest reveals here was of the line of Davy D. Jones, who is a legendary pirate in both the One Piece franchise and in real life. A common belief now is that Davy D. Jones was perhaps on the same level of overall importance as Joyboy during or before the Void Century and was just as powerful, so many fans believe that he was the original user of this second Nika fruit, or the Devil Fruit itself may be the Hito Hito no Mi, Model: Davy Jones.

Interestingly, the Nika and Destroyer Nika Devil Fruits may not be the only God Fruits that have existed in the One Piece world. During the Skypiea arc, the Gods of Rain, Earth, and the Forest were spoken in a prayer alongside the Sun God, and their existence was teased once more in Chapter 1138 with the revelation of the Harley Texts and Elbaf mural.
This has led many to believe that there are God Fruits corresponding to each of these mythical deities, and that they have manifested in the modern day within some of the franchise's best characters. For example, fans believe Imu to be the Earth God and Dragon to have eaten the Rain God Devil Fruit, which may explain his mysterious abilities.
