It's good to have ambitions, but someone truly remarkable wouldn't have joined the Monster Association in the first place.
When fans first saw Phoenix Man in the series, none expected him to be as great of a threat as he ended up being, and it wasn't until he took on Child Emperor that this was seen. Though deceptively strong and fast, Phoenix Man was initially defeated quite effortlessly by the S-Class hero, only to be reborn into a far stronger state in the second round of their bout. This fight was awesome to witness as it showed the epitome of brain vs. Brawn, with Child Emperor eventually showing his offensive capabilities and putting down the monster for good.

It can be argued that Garou is the central focus of the entire Monster Association arc, even more so than Saitama. This is due to his substantial growth throughout the arc, which met one of its high points in his fight against his old mentor, Bang, where the two showed the greatest display of Martial Arts mastery in the series in a very equal fight between student and master. Although Garou won, Bang did far more damage to him than any of the terrifying monsters he had fought earlier, even cracking his shell, which allowed Garou to regain his composure. Bang more than lived up to his title of S-Class Rank 3 in this bout, and was the main reason Garou became himself.

However, the incredible three-way fight between Garou, Platinum Sperm, and Flashy Flash prioritized blinding speed over all else, as these 3 were among the fastest characters in the entire series, and they put their speed to the test. Due to their blinding pace, they formed incredible constellations which just grew more colorful and thicker with each passing moment, cementing this battle as one of the most stunning in the entire Monster Association arc. At the end, Flashy Flash got knocked out, leaving only Garou and Platinum Sperm to battle it out against one another.
