I love the 'Beyond the Beef' quest in New Vegas. It has a lot of different options and that makes it fun on subsequent playthroughs.
In terms of good writing I quite like the main quest in Fallout 4's Far Harbor. DiMA in particular is an interesting character with an interesting backstory.

The gunplay in Fallout 3 is quite dull, especially by today's standards. If I remember right it's also somewhat stat-based so your accuracy will be determined partly by your stats. It's more of an action RPG system than what we got in Fallout 4 and 76.
One Oblivion Remastered Quest Pushes Its Immersive Features to Their Limits
I've always loved that attention to detail in Bethesda games. It makes the games more immersive and the world feels more alive as a result.
I also feel that Oblivion's faction quests and side quests are more enjoyable than Skyrim's. In Oblivion it feels like there's a lot more variety particularly to the side quests. Oblivion has a lot more quests that don't send the player to another dungeon on a fetch quest.
