joshua It's been a minute since I've played it and maybe some things would be easier now...for instance I found out about the loop hole of not collecting the first dungeon's stone, running back through it to beat the boss again and again to gain extra XP. Great idea about where to restart when you die, I also think allowing players to go up at least one more level would be good too, and of course they can always have difficulty levels in a remake.
Graphically, give me the Link's Awakening remake but a bit more mature to fit the darkness of ZII.
MM is easily the most difficult modern Zelda game but I don't remember the Goron races being that difficult, certainly takes a few tries though. I haven't plaid the 3DS update to it but I guess the saving around that is improved too.

I was born in '84 and agree with your top 3 but BotW was absolutely incredible. It gave me OoT vibes when you see how large the world is, just like when you enter Hyrule field for the first time. I didn't mind weapons breaking, but I did mind them breaking so easily.
I really need to play WW again but I'm waiting on an updated version for Switch 2.

SS was easily my least favorite console game, but I would like to revisit it if they do another HD remake on Switch 2.

I would love a remake of Zelda II. The over world graphics are bad and it's too difficult, but so much could be vastly improved in a remake.
