I don't understand why elden ring is not in this list, fantastic RPG. Although the story is much harder to follow, if you do it is worth the work. Also, morrowind was my favourite of the elder scrolls, so if you like skyrim give it a go. It is harder due to the reduced hand holding but the sense of achievement is much better when you finish a mission
