Either you apply extremely unrealistic thrust, or you accelerate at a slower and steadier rate. In this case, thar applies to turning as it's thrusters accelerating you onto a different course.

That said, it really just depends on how you handle yorlur ship building in Starfield. You can make some pretty nimble ships
