Dark Souls is unlikely to appeal to fans of traditional Final Fantasy games. They are completely distinct RPGs. Dark Souls lacks everything you enjoyed about Final Fantasy. You may even become depressed if you play such game. Hahaha.

For PS3, I think it should be FF XIII.

I actually used Selphie in the early game because of her Full-cure. But as the game progresses, she's been easily replaced by other, more useful characters.

The leap from FF IX to FF X is greater than the leap from FF X (or XI) to FF XII.

Many people were astonished playing FFX for the first time in 2001. Such a huge leap from FF IX left people in awe. When FF XII came out in 2006, people were just okay with it, being accustomed to the graphics and quality from its predecessors.
