Like any farming sim, Stardew Valley has plenty of crops you can plant. However, you won't get access to all of them at once. Pierre's and JojaMart have seasonal seed lists, and even with that in mind, they don't sell all the seeds the game has to offer. Some seeds you can't get from Pierre's no matter what, and some seeds won't appear at all during the first year.
Garlic is one such crop. While garlic seeds are cheap and grow fast, you won't find them for sale in a regular shop until Year Two begins. It's only then that you'll be able to produce garlic bulbs and start creating all the recipes that call for a pungent flavor.

Where to Get Garlic Seeds
When Year Two begins, Pierre will let you know that he's adding to his usual seed stocks. For spring, his new crops are garlic seeds and rice shoots. These seeds are exclusive to Pierre's and will never show up in JojaMart's inventory.
The one way to get garlic during Year One is by checking the Traveling Cart on Fridays and Sundays. The cart has a mostly random inventory that can include garlic bulbs and garlic seeds (you can convert fully grown crops into seeds using the Seed Maker, unlocked by reaching Farming 9). However, you should expect to pay at least twice what the garlic is worth, and you don't really need garlic items right away. Overall, getting garlic early isn't worth the time, money, or effort.
Garlic grows quickly, and even if you don't use any Speed-Gro they'll mature in four days after planting. This means if you plant them on a Monday, they'll be ready to harvest on Friday. Each seed costs 40g, the base value of a mature garlic bulb is 60g, and an iridium-grade garlic sells for 120g.
How to Use Garlic
While garlic isn't much of a cash crop, you can put it to use in a variety of ways.
- As a vegetable, you can create pickled garlic in Preserves Jars worth 170g, and make garlic juice in a Keg worth 135g.
- Also like other vegetables, most villagers like getting garlic. Abigail, Haley, Jas, Jodi, Sam, and Vincent dislike garlic, and Evelyn and Pierre have a unique hatred of the fragrant bulb.
- At Combat 6, you unlock the crafting recipe Oil of Garlic. For 10 real-time minutes, this special item stops monsters from spawning in the regular Mines, stops special infestation floors from appearing, and prevents swarm attacks. This means you can get almost a whole day of monster-free mining, though the oil doesn't work in the Dangerous Mines. The only trouble is that you need 10 bulbs of garlic for each bottle.
- The food recipes Escargot and Fiddlehead Risotto call for garlic.
- The Gourmand Frog on Ginger Island wants you to grow three crops on the island farm. These crops are melons, wheat, and garlic.
