Bowing can only be performed on a grass mat in Where Winds Meet. Any puzzle or interaction that requires the player to “bow” in Where Winds Meet will have a grass mat placed somewhere nearby where this action can be performed. This object is called a Liangxi in China, and it looks similar to a Tatami Mat from Japanese culture.

To bow, walk over to the grass mat until you see a prompt saying “Bow” (pictured above). Press the interact key (F/R2) to start the bow action. A progress bar will appear to indicate how long performing this action will take.

In the Echoes in the Shrine exploration quest, the player will need to perform the Bow action three times on the grass mat in front of the large statue to get it to move. This means that once the progress bar for the bow is completed once, you will have to retrigger the prompt two more times. The statue will automatically move out of the way when this action is completed thrice.
